Healthy dessert for kiddos

Warning: during my pregnancy there is a high possibility that you will hear me talking a lot about food: )

Grandma gave Sofia 'Dora and Diego cookbook', and I found this recipe that sounded good. It has quinoa, the grain  that beats all the other in the amount of protein, and also rich in calcium, iron and vitamin E and B; that's why they probably call it 'mother grain'.  So, just because of all the healthy ingredients I gave it a try. It's called a dessert, but I eat it for breakfast too.

Quinoa Pudding
- 3 cups apple juice
- 1 cup quinoa
- 1/2 cup chopped dried apricots
- 1 cup low-fat milk, plus 2 tbsp
- 2 eggs
-1/4 cup honey
-1/4 tsp cinnamon
- 2 small bananas, sliced
- 1/4 dulce de leche or caramel ice topping, warmed

1. In a large saucepan on medium heat bring the first 3 ingredients to boil. reduce heat to medium -low, for 15-20 min or until quinoa is tender
2. Meanwhile, in a medium bowl, whisk the next 4 ingredients until well blended. While stirring, slowly add the egg mixture to cooked quinoa. Cook, stirring constantly, for 3 to 5 min or until thickened.
3. Transfer pudding to medium bowl, cool slightly. over surface with foil and refrigerate for 2-3 hours.
4. To serve, spoon into dessert bowls. top with banana slices and put the thinned dulce de leche on top.
